Why we’d go

One of the very few Peninsula estates where the founder is routinely in the room, pouring and talking, on a Saturday afternoon.

Paradigm Hill is a single-site Pinot Noir and Chardonnay estate run by George and Ruth Mihaly on a block between Merricks and Balnarring. The tasting experience is deliberately small in scale: appointment-only, usually led by George himself, and structured around the kind of slow walk through a single year's wines that you only get at properties where the founders are still on the ground. George's obsession with the site, the farming, the timing, the winemaking decisions, comes through in every conversation.

The wines are among the more cerebral on the Peninsula: a house style that leans into acid and structure rather than immediate fruit, and a single-vineyard approach that rewards cellaring. The L'ami Sage Pinot Noir is the bottle to understand first. The Col's Block is the one to take home and set aside.

This is a cellar door for people who want to spend an hour with the person who made the wine. Book well ahead, and go prepared to listen as much as to taste.

Paradigm Hill is a doctor's estate in the best possible sense - George Mihaly brings the same precision to viticulture that he presumably brings to medicine. The result is a zero-carbon operation producing genuinely compelling Pinot Noir, Shiraz, and Riesling from Merricks vines planted in 1999. The name suggests philosophical ambition, and the wines deliver it. It's not an easy drop-in, but the effort is rewarded.

Visiting

Appointment required except on the first weekend of each month (open 12pm–5pm walk-in). Standard tasting fee waived with purchase; Premium/private tasting fee non-refundable. Dogs welcome on deck and verandah. Seasonal picnic events in spring/summer.
