The roastery occupies a converted warehouse in Mornington's industrial backstreets; the cafe out the front is where locals start their day, freelancers park for the morning, and visitors suddenly understand why people keep describing Mornington as a real town rather than a tourist stop.
The coffee is the headline, single-origin rotations that change often, a filter bar that is actually used, and a retail wall worth taking home. The food is the quiet achievement: a tight brunch menu that stays on the right side of pretentious, good pastries from a Melbourne baker, and the best egg sandwich south of the bridge.
