Why we’d go

The position, directly on the sand at Sorrento, open to the bay, is the kind that anywhere else in the world would be roped off for a hotel group.

The Baths sits directly on the sand at Sorrento, on the site of heritage bathing pavilions that predate any of the Peninsula's contemporary dining scene. Here it is an open-air seafood dining room with Port Phillip Bay at your feet, and on a clear summer evening the view is one of the most photographed dining positions on the Peninsula for reasons that do not need explaining.

The menu leans into local fish and oysters done with restraint: a serious raw bar for starters, whole fish or bouillabaisse for the middle of the table, and a list of things that came out of the water that morning or the morning before. A casual kiosk on the jetty side handles walk-up food and drinks if you do not want to commit to a full sit-down; the restaurant proper handles the long lunches and sunset bookings.

Book for sunset. Order the oysters and whatever whole fish the kitchen is running. Let the room do the rest, the setting is the service.
